Moroccan Kebabs Recipe - Procedure

In Morocco, we grill all kinds of food all year-round but the lamb or beef brochettes among our very favorites. Usually reserved for special occasions and big events, they're best made with extra tender cuts of meat such as leg or shoulder of lamb or fillet of steak.
Our traditional seasoning below includes herbs, lots of onion, paprika, cumin, salt, and pepper. Cayenne pepper is optional; I do like to include it sometimes.
In some occasions, for a simplification, you can omit the paprika and cumin and season only with the herbs, onion, salt, and pepper. Vegetables are not traditionally threaded onto the skewers with the meat, but you can do so if you like.
You may serve Moroccan kebabs as an entrée, as part of a multi-course meal, or as a sandwich filler in crusty Moroccan bread. Tomato and Roasted Pepper Salad is a popular accompaniment and sometimes Black Olive can be served with it as well.
For best results, you'll want to allow several hours or longer for the meat to marinate in the spices, so plan ahead and follow all the steps of thses famous Moroccan kebabs recipes.

1 lb. of chicken breast cut to cubes
A choice of vegetables use (green and red peppers, mushrooms, onions, all cut into cubes). Optional
Juice of ½ a lemon
2 crushed garlic cloves
1 tbsp. of finely chopped parsley and cilantro
Salt
Pepper
¼ tsp. of ginger powder

2 lb. of beef (sirloin) or lamb (shoulder) cut into cubes
1 medium chopped onion
2 tbsp. of chopped parsley and cilantro
1 tbsp. of paprika
1 tbsp. of fresh ground cumin
Salt
Pepper
½ tsp. of coriander powder
2 tbsp. of vegetable oil or olive oil

1 lamb liver or part of beef liver
Some fat
1 tbsp. of ground cumin
Salt
Pepper
½ tsp. coriander

Lamb Kebeb
1 kg or 2 lb. 3 oz. of leg of lamb (or beef fillet) 1 large onion (finely chopped)
3 tablespoons of fresh parsley (chopped)
3 tablespoons of fresh cilantro (chopped)
2 teaspoons of paprika
1 teaspoon of cumin
1 teaspoon of pepper
2 teaspoons of salt (to taste)
1 tablespoon of vegetable oil
1 tablespoon lemon juice (optional)
