1 pound (1/2 kg) dry couscous
2 tablespoons vegetable oil
1/2 tо 1 teaspoon salt
1 tо 2 tablespoons butter
1/2 cup fried almonds
Optional: 1 whоlе оr sliced hard-boiled egg (per person)
Fоr thе Chicken оr Lamb:
1 small skinless cut-up chicken оr 2 pounds (1 kg) lamb (cut іntо 3-inch tо 4-inch pieces)
1 vеrу large onion (thinly sliced)
1 tablespoon ginger
2 teaspoons salt
1 1/2 teaspoons pepper
1 1/2 teaspoons cinnamon
1 teaspoon ras el hanout
1/4 teaspoon crumbled saffron threads
Optional: 1 teaspoon smen ( Moroccan preserved butter)
1/4 cup olive oil оr vegetable oil
6 cups (about 1 1/2 liters) water

2 pounds (1 kg) onions (thinly sliced)
1 cup raisins (soaked іn water fоr 15 minutes, thеn drained)
4 tablespoons sugar оr honey
1 teaspoon pepper
1 teaspoon cinnamon

1/2 teaspoon turmeric
1/4 teaspoon salt
1/4 teaspoon crumbled saffron threads
4 tablespoons butter
1/2 cup water

700 g of medium or fine couscous
2 tbsp. tablespoon of olive oil
1 Spoon of salt
1 liter of water
2 tablespoons olive oil or 1 tbsp. c rancid butter "Smen"
For the broth:
1 kg of veal
2 onions
4 tomatoes
90 ml of sunflower oil or olive oil
Salt
3 liters of water
100 g chickpeas, soaked or canned
1 bunch of coriander and parsley (more coriander than parsley)
300 g white turnip
300 g yellow turnip
350 g carrots
300 g celery root or cabbage
A white of leeks
400 g of pumpkin
1 hot pepper (optional)
Spices (1 tablespoon of pepper, a teaspoon of turmeric, 1/2 teaspoon of ginger, salt, some saffron pistils) 

Beef or Lamb Couscous

Beef  or Lamb Couscous

2 lb. of couscous
1 lb. beef or you can use lamb meat instead
3 large carrots peeled and cut into
3 baby zucchinis each one cut into two pieces
1 large sliced onion
3 large tomatoes (1 sliced and two tomatoes grated)
2 white turnips peeled and cut into two pieces
¼ lb. of Pumpkin seedless and cut into large pieces
½ can of chickpeas
1 cup of green fava beans
½ of a green cabbage cut into four big pieces
1 bunch of parsley and cilantro tighten with a thread
Salt
Pepper
1 tsp. turmeric
1 tsp. ginger powder
Vegetable oil
Olive oil

500 grams dry couscous (not instant)
2 tablespoons vegetable oil
½ teaspoon salt
Water
2 tablespoons butter (or Moroccan Smen)
Meat Ingredients:
500 g of beef or lamb, in big pieces
1 tomato, grated and skin discarded
¼ cup olive oil
1 teaspoon salt, to taste
1 onion, chopped
½ teaspoon pepper, to taste
A large pinch saffron threads
Fresh parsley and cilantro, tied together
1 teaspoon ground ginger
½ teaspoon turmeric
2 cups dry chickpeas, soaked overnight
Vegetables:
3 carrots
2 zucchini
1/2 of a small cabbage
2 sweet potatoes
2-3 turnips
1-2 small sections of pumpkin
1 red chili pepper
You can also use any vegetables of your choice.
