Moroccan Chicken with lemon 

  • Put the whole chicken in a large pan add 3 soup spoon of salt and squeeze the whole lemon on it and rub the skin and inside of the chicken with it to prevent the smell of the white meat and leave it for 10 to 20 minutes.
  • In a separate bowl add parsley , cilantro ,minced garlic , salt , pepper , turmeric , 1 soup spoon of olive oil , and mix all the ingredients well and marinate the chicken with it , and leave it for 2 hours or more ( you can marinate the chicken overnight ,as long as it stays in the marinate as tasty as it can be) .
  • Cooking : 
  • In a large cooking pan, add the onions, minced garlic, parsley and cilantro, vegetable oil , olive oil, all the spices that I used in the marinating plus saffron and the gee. Mix very well and put it on the fire. add the chicken the pan and leave it to cook for 5 minutes and flip it over to the other side for another 5 minutes , then add 2 cups of water and leave it to cook for 45 minutes in a medium heat.
  • Take the chicken and butter it and put it in a buttered over pan to broil for 30 minutes till you get the golden color. 
  • To finish the sauce, add chicken livers, green olives and the pieces of preserved lemon while it is still cooking .
  • After 10 minutes of cooking, you should have a thick, nice, tasty sauce.

Serving

In a around big dish serve the whole golden chicken and pour the sauce on the top of it. You can also add some French fries on the top of it and serve it with flat bread or Moroccan homemade bread. BON APPETIT.
